Ingredients

  • 800 g quark (20% fat)
  • 350 g whipping cream
  • sugar
  • 2 tsp bourbon vanilla
  • 150 g sea buckthorn berries (or frozen)
  • 150 g blueberries (or frozen)
  • 150 g black currants (from jar)

Instructions

    Beat the cream until stiff peaks form. Mix quark with vanilla and 5 tbsp sugar, then fold in the whipped cream.

    Wash and pat dry the sea buckthorn berries, blueberries, and black currants; let them drain well.

    Divide the quark mixture into three bowls. Puree half of each fruit type separately, strain through a sieve, and mix each puree back into its corresponding bowl with more quark cream. Fold in the remaining whole fruits for garnish and adjust sweetness if needed.

    Serve the different creams in small dishes, garnished with the leftover fresh fruits.
