Pralinen mit Kaffeeglasur

Ingredients
- 100 g cold butter
- 250 g flour
- 100 g ground hazelnuts
- 100 g sugar
- 1 pinch salt
- 1 egg
- flour (for working)
- 150 g white couverture chocolate
- 3 tbsp whipping cream
- 30 g Butter
- 1 tsp instant coffee powder
- 0.5 tsp cocoa powder
- 2 tbsp coffee liqueur
- 150 g powdered sugar
- 50 g dark couverture chocolate
- 50 g white couverture chocolate

Cut the butter into pieces and quickly knead with flour, hazelnuts, sugar, salt, and egg into a shortcrust dough. Shape into a ball, wrap in plastic wrap, and chill for about 30 minutes.

Preheat the oven to 180°C fan.

Roll out the dough on a floured surface to about 3 mm thickness and cut round cookies of approximately 3.5 cm diameter. Place on a baking sheet lined with parchment paper and bake in the oven for about 12 minutes until golden brown. Remove from the tray and let cool.

For the cream filling, chop the couverture chocolate into pieces and melt over a double boiler while stirring. Whisk in the cream and butter pieces with a whisk. Cool slightly and stir until creamy. Fill a piping bag with a smooth tip and pipe onto the underside of half the cookies. Top with another cookie and press lightly.

Mix the coffee powder, cocoa, and liqueur together. Add powdered sugar and enough water to create a glaze. Brush over the cookies and let dry. Melt both chocolates for decoration, cool slightly, then draw fine lines over the cookies and allow to dry again.
