Ingredients

  • 40 cherries
  • 50 ml cherry liqueur
  • 40 large hollow praline spheres (dark chocolate)
  • 300 g dark chocolate (at least 60% cocoa content)
  • 50 ml whipping cream
  • 75 g chocolate sprinkles

    Wash the cherries, pit them but leave the stems intact. Pour the liqueur over them and let steep for about 30 minutes.

    Place the hollow praline bodies into a mold and fill with the cherries and liqueur.

    Chop 100 g of chocolate and place in a bowl. Bring the cream to a boil, pour it over the chocolate, stir from the center until a thick emulsion forms and the chocolate fully melts. Let cool until spreadable. Use this to seal the openings around the stems of the hollow bodies. Chill for at least one hour until firm. Then chop the remaining chocolate and melt it over a double boiler. Dip the cherries in the melted chocolate, then coat the base with sprinkles. Place on parchment paper and let set.
