Ingredients

  • 1 kg potatoes
  • 150 g breakfast bacon
  • 2 onions
  • 2 tbsp butter
  • 2 tsp flour
  • 500 ml broth
  • 150 g whipping cream
  • Salt
  • ground pepper
  • nutmeg
  • 0.5 tbsp vinegar
  • 3 tbsp chives

Instructions

    Wash, brush, and boil the potatoes in salted water. Dice the breakfast bacon finely.

    Peel and dice the onions finely. Sauté the bacon over low heat until translucent, then add butter and onions and sauté until softened. Sprinkle with flour and cook briefly to lightly brown. Gradually whisk in the broth and simmer gently for about 15 minutes, stirring occasionally. Stir in the cream, reheat, and season with salt, pepper, nutmeg, and vinegar.

    Drain the potatoes, rinse briefly under cold water, and peel them.
