Serviettenknödel

Ingredients
- 150 g toast bread
- 500 g flour
- 1 tsp salt
- 1 pinch sugar
- Nutmeg (freshly grated)
- 30 g yeast
- 250 ml milk (lukewarm)
- 1 egg
- 1 egg yolk
- liquid butter (for greasing the napkin)

Cut the toast bread into small cubes.

Mix the flour with salt, sugar and nutmeg, place in a bowl and crumble the yeast over it. Stir in the milk, egg and yolk and work everything into a smooth dough. Mix in the bread pieces, cover the dough and let rise in a warm place for about 30 minutes.

Bring plenty of salted water to a boil in a long, flat pot.

Moisten three cloth napkins or dish towels slightly, lay them out and brush with liquid butter.

Shape the dough into three rolls about 15–30 cm long and 4–5 cm thick. Wrap each roll loosely in the napkins/towels, tie the ends with kitchen twine and cook in the boiling salted water, turning occasionally, for roughly 30 minutes.

Remove the dumpling rolls and let them drain well. Unwrap from the napkins and slice into rounds using a thread or knife.
