Boiled Potatoes with Herb Quark

Try the delicious boiled potatoes with herb quark from Spoonsparrow!

Ingredients

  • 4 large waxy potatoes (about 200 g each)
  • Salt
  • 250 g low‑fat quark
  • 150 g crème fraîche
  • 3 Tbsp freshly chopped herbs (e.g., parsley, chives, basil, dill, thyme, etc.)
  • 1 Tbsp roasted sunflower seeds
  • black pepper (ground fresh)
  • a splash of lemon juice

Instructions

    Wash the potatoes and cook them in boiling salted water for 25–30 minutes. While they simmer, mix the quark with crème fraîche, herbs, and sunflower seeds; season with salt, pepper, and lemon juice.

    Drain the potatoes, let them steam dry, then split each one open with two forks. Spoon the herb quark into the cavities and serve on a plate with fresh salad as desired.
