Ingredients
- 800 g waxy potatoes
- Salad
- 2 Spring Onions
- 250 g canned tuna (in its own juice)
- 1 egg
- 2 tbsp freshly chopped parsley
- 1 tsp untreated lemon zest
- 60 g panko breadcrumbs
- pepper (ground)
- 3 tbsp vegetable oil

Peel, wash and cook the potatoes in salted water for about 30 minutes. Drain, let steam off, then press through a potato masher into a bowl. Wash, trim and finely chop the spring onions. Drain the tuna well, flake it, and mix with the spring onions, egg, parsley, lemon zest and 2-3 tbsp panko into the potatoes. Season with salt and pepper. Shape small patties from the mixture and roll them in the remaining panko.

Cook the patties in a large hot pan with oil for 4-5 minutes on each side until golden brown. Drain on kitchen paper and serve.
