Baked Meatballs

Ingredients
- 750 g mixed ground beef
- 2 shallots (finely chopped)
- 80 g smoked bacon (diced)
- 2 tbsp clarified butter
- 2 stale rolls
- 750 ml milk
- 3 eggs
- 12 Cherry tomatoes
- Salt
- freshly ground pepper
- 2 tbsp parsley (finely chopped)
- 4 tbsp butter
- 4 tbsp flour
- 150 g grated Gouda
Instructions

Soak the rolls in lukewarm water.

Brown the bacon in 1 tbsp butter, add shallots and sauté until translucent, stir in parsley, remove from heat and let cool slightly; then mix with ground beef, 1 egg, the squeezed-out rolls, salt and pepper. Shape into 12 meatballs, fill each with a cherry tomato, and quickly sear all sides in remaining butter.

Melt butter in a pot, whisk in flour, cook briefly, then stir in milk with a whisk, season with salt and pepper, and simmer gently for about 10 minutes, stirring occasionally. Remove from heat, let cool slightly, add grated cheese and the remaining eggs, and beat vigorously.

Place the seared meatballs in a greased baking dish, pour the sauce over them, sprinkle with remaining cheese, and bake at 200°C for about 30 minutes until the sauce thickens and turns lightly brown. Garnish with parsley before serving.
