Ham in Bread Dough

Ingredients

  • 400 g dark wheat flour (Type 1050)
  • flour (for the work surface)
  • 0.5 sachet dry yeast
  • Salt
  • 0.5 tsp Sugar
  • pepper (ground)
  • 30 g soft butter
  • 60 g orange marmalade
  • 2 tsp mustard powder
  • 1.5 kg ham (boneless, order from a butcher)
  • butterfat (for frying)
  • whipped cream

Instructions

    Knead flour, yeast, 1 tsp salt, sugar, pepper with 270 ml lukewarm water and the butter using a dough hook into a soft dough. Let rest covered for about 30 min to rise.

    Stir orange marmalade with mustard powder.

    Brown the ham in butterfat in a large non‑stick pan over good medium heat for about 10 min, turning frequently. Score the meat with a sharp knife in a diamond pattern millimetre deep. Remove from the pan and brush with the mustard marmalade. Set aside. Roll out the dough on a floured surface so it can wrap the meat.

    Place parchment paper on a baking tray. Wrap the ham in the dough, seam side down, and press the edges together well. Let rise again for 20 min. Preheat oven to 190°C. Brush the bread dough with cream. Cut a small hole in the centre of the top and bake the roast in the oven for 30 min until golden brown. After baking open the oven slightly and let the roast rest for 10 min.
