Ingredients

  • 200 g Green beans
  • Salt
  • 600 g peeled potatoes (from the day before; waxy)
  • 3 tbsp Rapeseed oil
  • 140 g diced breakfast bacon
  • 10 eggs
  • Salt
  • pepper (ground)
  • air‑dried ham (for garnish)
  • fresh thyme (for garnish)

Instructions

    Preheat the oven to 180°C fan. Wash, trim and blanch the beans in boiling salted water for 6–8 minutes. Shock in ice water, drain and chop small.

    Heat rapeseed oil in an oven‑proof, non‑stick pan. Fry the potatoes and bacon for about 5 minutes, turning occasionally. In the meantime whisk the eggs with salt and pepper. Add the beans to the pan and pour the egg mixture over everything.

    Bake in the preheated oven for about 10 minutes until set, then cut into bite‑sized pieces. Stack on plates and garnish with air‑dried ham and fresh thyme. Serve warm or cold.
