Beef Fillets Stroganoff

Ingredients
- 600 g beef fillet tips
- 2 onions
- 250 g Mushrooms
- 2 medium pickles
- 3 Tbsp plant oil
- 20 g butter
- 1 tbsp flour
- 200 ml meat broth (from a can)
- 100 g Sour cream
- 1 tbsp mustard
- 0.5 lemon (juice)
- Salt
- Pepper
- parsley (for garnish)
Instructions

Peel and finely chop the onion. Clean the mushrooms and cut them into thin slices. Cut the pickles lengthwise into sticks, then into fine strips. Slice the meat first into 1 cm thick pieces, then into 1 cm wide strips. Heat the oil and sear the meat portions over high heat for 2 minutes. Remove from the pan and keep warm.

Drain the cooking fat, add butter to the pan. Sauté onions and mushrooms. Sprinkle flour, pour in broth, bring to a boil once, then stir in sour cream. Cook until thickened while stirring.

Add the meat, mustard, and pickles; season with lemon juice, salt, and pepper. Transfer to serving bowls, garnish with parsley, and serve. Pair with swirled potatoes.
