Ingredients
- 800 g peeled potatoes
- 1 stalk leeks
- 5 tomatoes
- 300 g heavy cream
- 1 egg (large)
- 3 tbsp Parmesan cheese
- Salt
- freshly ground pepper
- freshly grated nutmeg
- 2 tbsp finely chopped parsley
Instructions

Preheat the oven to 200°C fan-forced.

Peel and slice the potatoes into thick rounds. Wash, trim, and slice the leeks. Wash and slice the tomatoes. Layer the potatoes, leeks, and tomatoes in a baking dish like roof tiles.

Whisk together the cream, egg, parmesan, salt, pepper, and nutmeg until well combined. Pour over the vegetables and place the dish in the hot oven. Bake for 25-30 minutes until golden brown.

Sprinkle with parsley, serve hot.
