Potato Swede Gratin

Ingredients

  • 400 g waxy potatoes
  • 2 carrots
  • 400 g swedes
  • 4 eggs
  • 250 ml Whipping Cream
  • 100 g Sour cream
  • 75 g grated Emmental cheese
  • Salt
  • black pepper (freshly ground)
  • nutmeg
  • butter (for the baking dish)
  • 1 tbsp freshly chopped parsley

Instructions

    Preheat the oven to 180°C fan-forced.

    Peel the potatoes, carrots and swedes and slice them into 3-4 mm thick rounds. Layer the slices in a buttered baking dish. Whisk together the eggs, cream, sour cream and cheese; season with salt, pepper and nutmeg. Pour over the vegetables. Bake for about 40 minutes until golden brown. Sprinkle with parsley before serving.
