Potato Soup with Semolina

A soup classic full of healthy ingredients and also tasty: potato soup with semolina from Spoonsparrow.
Ingredients
- 1 onion
- 2 tbsp butter
- 200 g semolina
- 100 ml dry white wine
- 1 bay leaf
- 3 peppercorns
- 800 ml vegetable broth
- 3 Carrots
- 1 parsley root
- 400 g waxy potatoes
- Salt
- ground pepper
- 2 tbsp freshly chopped parsley

Peel and dice the onion. In a large pot melt the butter and sauté the onion until translucent. Add the semolina, deglaze with white wine, then add the spices and pour in the broth. Simmer gently for about 20 minutes.

Peel, roughly cube the carrots, parsley root, and potatoes, and add them to the soup. Continue simmering for another ~20 minutes. Finally strain out the bay leaf and peppercorns, season with salt and pepper, and serve the potato semolina soup garnished with parsley.
