Ingredients
- 1 chicken (pre‑cooked, ca. 1.4 kg)
- 250 g onions
- 2 Garlic cloves
- 0.5 bunch coriander
- 2 tbsp Vegetable oil
- 1 tbsp red curry paste
- a pinch ground cumin
- 1 tsp garam masala
- Salt
- black pepper (freshly ground)
- 400 ml poultry stock
Instructions

Wash the chicken, pat dry and cut into 8 pieces. Peel and finely dice the onions and garlic. Wash the coriander, shake dry and roughly chop the leaves.

Heat oil in a pan and sear the chicken pieces on all sides, seasoning with salt and pepper; remove to a plate. In the same pan sauté onions and garlic until translucent, stir in curry paste, return chicken, deglaze with stock. Add spices and simmer over medium heat for about 30 minutes. Plate the chicken onto warmed dishes, pour sauce over it and sprinkle freshly chopped coriander before serving.
