A classic that always tastes good and is also healthy: the Graupen vegetable soup from Spoonsparrow is guaranteed to succeed!
Ingredients
- 1 onion
- 1 Garlic clove
- 1 Carrot
- 125 g celery root
- 100 g pearl barley
- 2 tsp oil
- Salt
- Pepper (freshly ground)
- nutmeg
- 1.2 l vegetable broth (instant)
- 50 g Bündner meat (thin slices)
- 1 Tbsp parsley

Peel and finely dice the onion, garlic, carrot and celery root. Sauté the prepared vegetables with the pearl barley in oil. Season with salt, pepper and nutmeg, then add the broth and let the soup simmer gently for 25 minutes. Slice the Bündner meat into strips.

For serving, ladle the Graupen vegetable soup into bowls, distribute the Bündner meat on top, and sprinkle with parsley before serving.
