Potato Sausage Quiche

Ingredients
- 2 firm potatoes
- 1 pork sausage
- 400 ml whipping cream
- 6 Eggs
- 150 g grated Emmental cheese
- Salt
- white pepper

Knead a dough from flour, butter, 8 tbsp water and salt; wrap in cling film and chill for 30 minutes.

Peel the potatoes, cut into thick slices of about 3 cm width, and boil in salted water for 10 minutes until al dente. Drain and punch a round hole in the center of each slice for the sausage.

Preheat the oven to 200°C (400°F) with upper and lower heat. Grease the quiche tin. Roll out the dough on lightly floured surface and line the tin, including the rim.

Arrange the potato slices on the dough; cut the sausage into pieces about 3 cm long and insert them into the holes in the potatoes. Whisk together cream, eggs and cheese, season with salt and pepper, then pour over the potatoes between the slices. Bake the quiche for about 30 minutes until the custard sets.
