Potato Salad with Quark Dressing

Ingredients
- 800 g small new potatoes
- 2 red onions
- 2 EL vegetable oil
- Salt
- pepper (ground)
- 2 stems lemon basil
- 100 g yogurt
- 2 EL Apple cider vinegar
- 200 g quark
- 1 pinch sugar

Wash the potatoes thoroughly and steam for about 20 minutes. Then let them cool briefly.

Peel the onions and slice into rings. Cut the potatoes into bite‑size pieces. Sauté the onions in a hot pan with oil until translucent. Add the potatoes, cook for 2–3 minutes, season with salt and pepper, remove from heat and allow to warm slightly. Spread on a deep plate.

Rinse the lemon basil, shake dry, pluck the leaves, set aside some for garnish and finely chop the rest. Mix yogurt, vinegar, 2–3 EL water and lemon juice into the quark, season with sugar, salt and pepper. Pour over the potatoes and serve garnished with remaining leaves.
