Ingredients

  • 700 g waxy potatoes
  • Salt
  • 2 apples (e.g., Boskop)
  • 2 tbsp lemon juice
  • 150 g pickled mustard cucumbers
  • 1 bunch chives
  • 400 g marinated herring fillets in oil
  • 5 tbsp mayonnaise
  • 2 tbsp plain yogurt
  • 2 tbsp Sour cream
  • black pepper from the mill
  • sugar

Instructions

    Wash the potatoes and boil them in salted water for about 25 minutes. Drain, let steam off, peel, and allow to cool completely.

    Wash the apples, quarter them, remove the core, cut into small pieces, and mix with 1 tbsp lemon juice. Drain the mustard cucumbers well and cut into bite-sized pieces.

    Wash the chives, shake dry, and slice into rolls. Drain the herring fillets and cut into small pieces as well.

    Whisk together mayonnaise, yogurt, sour cream, and remaining lemon juice; season with salt, pepper, and a pinch of sugar. Cut the cooled potatoes into bite-sized pieces and combine with herring, apples, cucumbers, and the dressing. Plate and garnish with chive rolls.
