Potato Salad with Green Asparagus

Ingredients
- 600 g firm boiling potatoes
- Salt
- 400 g green asparagus
- 2 bunches arugula
- 150 ml hot vegetable broth
- Pepper (freshly ground)
- 1 tbsp mustard
- 5 tbsp white wine vinegar
- 5 tbsp olive oil
Instructions

Wash the potatoes and boil them in salted water for 25-30 minutes. Drain, rinse with cold water, peel, and slice into about 1 cm thick rounds.

Peel the lower third of the asparagus, trim the ends, and cut into bite-sized pieces. Wash the arugula, shake off excess water, remove tough stems, and tear into smaller pieces.

Combine potatoes and asparagus in a bowl and pour over vegetable broth. Whisk together salt, pepper, mustard, vinegar, and olive oil; add to the mixture and stir well.

Let the salad marinate for about 30 minutes. Before serving, fold in the arugula and serve in small bowls.
