  • 500 g waxy potatoes
  • 500 g Green Asparagus
  • Salt
  • 2 Spring Onions
  • 150 g cocktail tomatoes
  • 75 ml vegetable broth
  • 1 tsp sharp mustard
  • 1 tsp Honey
  • 5 tbsp pumpkin seed oil
  • 150 g feta cheese
  • chili flakes (for sprinkling)

Instructions

    Wash the potatoes and steam them for about 30 minutes until cooked. Peel and let cool to lukewarm, then cut into cubes. Peel the lower third of the asparagus and blanch in salted water for about 5 minutes. Shock in cold water, cut into 3–4 cm pieces and optionally halve lengthwise. Wash, trim, and slice the spring onions diagonally into thin rings. Wash and halve the tomatoes. Whisk together the broth, mustard, honey, and oil, seasoning with salt to taste.

    Arrange the potatoes, asparagus, spring onions, tomatoes, and crumbled feta on plates, sprinkling with chili flakes. Just before serving drizzle with the dressing or serve it separately.
