Ingredients

  • 600 g Potatoes
  • 200 g cocktail tomatoes
  • 1 bundle arugula
  • 50 g Pine nuts
  • Basil
  • 0.25 l broth
  • oil (4 tbsp)
  • vinegar (4 tbsp)
  • Salt
  • Pepper
  • 1 tsp Mustard

Instructions

    Boil the potatoes in water until cooked, drain and peel while still hot. Slice and place in a bowl.

    Whisk vinegar and broth together, season with mustard, salt and pepper, then pour over the potatoes. Mix well and let it rest to absorb flavors.

    Wash and roughly chop the arugula. Wash basil and cut into strips. Wash tomatoes and halve them. Toast pine nuts in a hot pan until golden brown.

    Add oil to the potato salad. Stir in arugula, tomatoes, basil and toasted pine nuts, then season with salt, pepper and vinegar to taste.
