Potato Rösti with Herb Quark

Potato rösti and creamy herb quark make a perfect pairing that supplies the body with plenty of vitamin B6 and potassium.

Ingredients

  • 400 g large waxy potatoes (2 large waxy potatoes)
  • 3 tbsp Rapeseed oil
  • 1 bundle dill
  • 1 bundle chives
  • 1 apple
  • 150 g Low-Fat Quark
  • Salt
  • Pepper

Instructions

    Peel, wash, dry, and grate the potatoes coarsely.

    Heat oil in a non-stick pan. Add potato shreds in 2-tablespoon portions, press into flat rösti shapes. Fry each side for 4-5 minutes over medium heat until golden brown.

    Meanwhile, wash, shake dry, and finely chop the herbs.

    Wash the apple, pat dry, quarter it, remove the core, and slice the quarters thinly.

    Mix quark with herbs and apple slices, season with salt and pepper.

    Drain finished rösti on paper towels and serve with the apple-herb quark.
