Ingredients

  • 4 salmon fillets
  • 2 tbsp clarified butter
  • 1 tbsp Lemon Juice
  • dill (chopped)
  • 1 kg mostly firm boiling potatoes
  • 1 egg
  • 100 g flour
  • Salt
  • Pepper (freshly ground)
  • oil (for frying)
  • 2 Spring Onions

Instructions

    Cut the spring onions lengthwise, wash and dry them, then slice into fine strips. Peel and wash the potatoes, grate them raw. Drain excess liquid, then carefully mix in the egg and flour. Season heavily with salt and pepper. Heat plenty of oil in a pan. For each rösti, pour 2 tbsp of batter into the pan, flatten it, and fry until golden brown on both sides. Keep warm in an oven at 80°C.

    Pan‑fry the salmon fillets in hot clarified butter over medium heat until crisp around the edges; the center should remain slightly translucent.
