Potato Radish Salad

Try the fresh potato and radish salad from Spoonsparrow. Delicious as a vegan main course or as a side dish to fish.

Ingredients

  • 800 g waxy potatoes
  • 1 Red Onion
  • 1 handful Arugula
  • 1 bunch radishes
  • 0.5 bunch herbs (dill, parsley or chives)
  • 200 ml vegetable broth
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Cook potatoes in boiling water for 20–30 minutes. Then drain, shock, peel while still hot and let cool.

    Meanwhile, peel and finely dice the red onion. Wash and dry the arugula. Clean, wash and thinly slice the radishes. Wash, dry and chop the herbs. Bring the vegetable broth to a boil.

    Slice the potatoes. Mix in a large bowl with hot vegetable broth, onions, vinegar, olive oil, salt and pepper. Let it steep for at least 30 minutes.

    Before serving, fold the prepared radishes, arugula and herbs into the potato salad and season with salt and pepper.
