Turnip Green Salad with Cucumber

Ingredients
- 3 Turnip greens
- 1 cucumber
- 1 Spring onion
- 2 stalks Parsley
- 150 g Greek yogurt
- 1 tbsp Apple cider vinegar
- 1 tsp Honey
- 1 tsp Mustard
- Sea salt
- Cayenne pepper
- Pepper

Clean, peel and shred the turnip greens. Clean, wash and shred the cucumber as well. Clean, wash and slice the spring onion into rings. Place everything in a salad bowl and mix.

Wash, spin dry and finely chop the parsley. Mix with yogurt, apple cider vinegar, honey, mustard and 2-3 tbsp of water to make a dressing. Season with salt and cayenne pepper.

Mix the salad dressing with the turnip greens and cucumbers and let it stand for about 10 minutes, then grind with pepper and serve.
