Ingredients

  • 700 g potatoes
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 1 tbsp potato starch
  • 3 egg yolks
  • 1 tbsp softened butter
  • 4 tbsp heavy cream
  • butterfat for frying

Instructions

    Peel the potatoes and boil in salted water for about 20 minutes, then drain and let cool slightly. Pass through a potato ricer into a mixing bowl and stir in the starch, egg yolks, butter, cream, salt, pepper, and nutmeg.

    On a floured surface roll the dough into a log and cut into slices about 2 cm thick.

    Heat butterfat in a pan and cook each side over medium heat for about 3-4 minutes until golden brown.

    Serve with salad or as a side to stews or game dishes.
