Potato Patties

Ingredients
- 50 g arugula
- 75 g soft cheese
- 100 g double cream fresh cheese
- 1 tbsp milk
- Salt
- Pepper (freshly ground)
- paprika powder (sweet)
- 800 g starchy sweet potatoes
- 2 egg yolks
- 2 tbsp flour
- Salt
- Pepper (freshly ground)
- 4 tbsp germ oil
- 20 g butter

Cook the potatoes in salted water until tender, peel and press through a potato masher. Let cool. Add the egg yolks and flour and mix into a smooth dough. Season well with salt and pepper. With floured hands shape about 1 cm thick discs. Heat oil and butter in a pan and fry the discs in batches on both sides until golden brown; keep warm in an oven at 70°C.

Wash, trim, rinse, dry arugula, remove any thick stems if desired, finely chop the leaves into 3 or 4 pieces. If needed, drain the soft cheese, then mash with a fork. Stir in fresh cheese, milk and chopped arugula leaves. Season with salt, pepper and paprika.

For serving arrange the potato patties on plates with the cheese cream and garnish with remaining arugula leaves.
