Ingredients

  • 800 g firm potatoes
  • 1 onion
  • Salt
  • Pepper
  • nutmeg
  • 1 egg
  • 100 g Sour cream
  • caviar (for garnish)
  • clarified butter (for frying)
  • 2 tbsp chives, finely chopped

Instructions

    Peel and slice the onion into fine strips. Wash, peel, and grate the potatoes. Squeeze out excess moisture from the grated potatoes, then mix with onions and egg, seasoning with salt, nutmeg, and pepper. Heat plenty of clarified butter in a wide pan and fry portions of the batter until golden.

    Let the pancakes drain briefly on kitchen paper, season, and keep warm in a 70‑80 °C convection oven until all the mixture is cooked. For serving, place a spoonful of sour cream on each pancake, garnish with caviar, and sprinkle with chopped chives.
