Ingredients

  • 1 kg waxy, medium-sized potatoes
  • 2.5 kg coarse sea salt
  • 2 egg whites
  • 2 sprigs Rosemary
  • 400 g sour cream
  • 150 g Keta caviar
  • 2 untreated lemons (zest)
  • dill tips (for garnish)

Instructions

    Preheat the oven to 200°C fan.

    Wash the potatoes. Mix the salt with whisked egg whites and, if needed, a splash of cold water. Spread about half on a parchment-lined tray and arrange the potatoes on top. Sprinkle with dried rosemary leaves and cover completely with the remaining salt. Bake in the oven for approximately 70 minutes.

    For serving break open the crust and remove it. Cut the potatoes crosswise, gently press apart, and fill with sour cream. Garnish with salmon caviar, lemon zest, and dill before serving.
