Potato Pancakes with Apple Sauce

Ingredients

  • 1 kg mostly firm boiling potatoes
  • 1 egg
  • 100 g flour
  • Salt
  • Pepper (freshly ground)
  • oil (for frying)
  • 1 onion
  • 1 tbsp chopped parsley
  • 1.5 kg apples
  • 5 tbsp sugar
  • 1 tbsp Lemon Juice
  • 300 ml water
  • almond kernels
  • raisins

Instructions

    For the apple sauce, add water, lemon juice and sugar to a larger pot.

    Peel, core and cut the apples into pieces and add them to the pot.

  3. 3.

    Bring everything to a boil and simmer the apples for about 5-10 minutes until soft.

    Move the pot aside and puree the apples into apple sauce using an immersion blender.

    Fill jars with the hot sauce, seal with screw caps and invert for 10 minutes.

    Peel and finely chop the onion. Peel, wash and grate the potatoes raw. Drain any liquid on top, then carefully mix in the egg and flour. Season heavily with salt and pepper, and fold in the parsley.

    Heat plenty of oil in a pan. For each pancake, pour 2 tbsp of batter into the pan, flatten it, and fry until golden brown on both sides. Keep warm in an oven at 80°C.

    Arrange the pancakes on a plate, serve with apple sauce and garnish with almonds and raisins.
