- 1 kg waxy potatoes
- 2 Eggs
- 1 tbsp flour
- Salt
- black pepper (freshly ground)
- 2 tbsp vegetable oil (for frying)
- 300 g crème fraîche
- 1 tbsp Lemon Juice
- 1 Garlic clove
- 3 tbsp chopped chives
- 400 g smoked salmon (sliced)

Peel, wash, and grate the potatoes coarsely. Mix with eggs and flour, season with salt and pepper. In hot oil, drop spoonfuls of batter into a large pan, spread flat, and fry until golden on both sides.

Whisk the crème fraîche with lemon juice, sugar, salt, pepper, pressed garlic, and chopped chives; taste and adjust seasoning. Plate the pancakes topped with salmon slices and drizzle with the chive cream.
