Potato Pancakes with Apple Sauce

The classic potato pancakes with apple sauce from Spoonsparrow taste freshly fried, crispy and delicious, keeping you full for a long time thanks to the potatoes!

Ingredients

  • 1 onion
  • 1 kg mostly firm boiling potatoes
  • 1 egg
  • 100 g flour (Type 405)
  • Salt
  • Pepper
  • 4 tbsp rapeseed oil (40 ml each)
  • 720 g apple sauce (one large jar)
  • 1 stalk chives

Instructions

    Peel and finely chop the onion. Peel, wash, and grate the potatoes raw. Drain any liquid on top, then carefully mix in the egg and flour with the potatoes. Season heavily with salt and pepper.

    Heat rapeseed oil in a pan. For each pancake pour 2 tbsp of batter into the pan, press flat, and fry until golden brown on both sides. Keep warm in a preheated oven at 80°C (60°C fan; gas: level 1).

    Arrange the potato pancakes with apple sauce on a plate, garnish with chives, and serve.
