- 650 g starchy potatoes
- Salt
- 3 tbsp Flour
- 1.5 tsp Baking Powder
- 125 ml milk
- 5 eggs
- 75 g sugar
- nutmeg
- clarified butter (for frying)

Peel the potatoes and cook them in salted water for about 25 minutes, then drain. Press the cooked potatoes into a bowl and let cool slightly. Add flour and baking powder to the potatoes. Whisk milk with eggs, seasoning with a pinch of salt, sugar, and a touch of nutmeg.

Combine all ingredients together and let rest for about 20 minutes; then stir until smooth. In a large non‑stick skillet, heat clarified butter over high heat and cook small pancakes (8–10 cm diameter) until golden brown on both sides. Arrange the pancakes on a plate, add a pat of butter on top, and drizzle with maple syrup before serving.
