Ingredients

  • 2 red bell peppers
  • 1 Garlic clove
  • 3 sprigs parsley
  • 8 eggs
  • 50 ml heavy cream
  • Salt
  • Pepper (freshly ground)
  • nutmeg (freshly grated)','2 tbsp butter

Instructions

    Wash, trim and slice the bell peppers into thin strips. Peel and finely chop the garlic. Rinse the parsley, pat dry, pluck the leaves and set a few aside for garnish. Roughly chop the rest, whisk with eggs and cream, and season with salt, pepper and nutmeg.

    Sauté a quarter of the peppers and some garlic in slightly heated butter in a small non-stick pan for 2-3 minutes. Pour a quarter of the egg mixture over them and cook 1-2 minutes until golden brown and set. Flip, cook the other side until golden brown, then remove from the pan. Keep warm at 80°C in the oven if desired until all omelettes are ready.

    Serve garnished with parsley.
