Ingredients
- 500 g Potatoes
- 500 g vegetable onions
- 500 g mushrooms
- 2 EL lemon juice
- 2 TL thyme leaves
- 2 EL pumpkin seeds
- 1 ball mozzarella (diced)
- 0.125 l broth
- 8 EL olive oil
- Salt
- pepper (from grinder)
- thyme (for sprinkling)
- aluminum foil
Instructions

Wash potatoes and slice into rounds.

Peel onions and cut lengthwise into thin strips.

Clean mushrooms.

Brush a baking dish with oil, layer potatoes and onions decoratively, season each layer with salt, pepper, and sprinkle thyme, spread mushrooms on top and drizzle with lemon juice, press lightly, pour broth, distribute mozzarella cubes over potatoes and onions, scatter pumpkin seeds, and drizzle everything with olive oil.

Bake in preheated oven at 175°C for about 1 hour until potatoes are cooked. Cover with aluminum foil during the first half hour.
