Potato Salad with Mayo-Yogurt Dressing

A fresh potato salad featuring a creamy mayo-yogurt dressing, perfect for any meal.

Ingredients

  • 1 kg firm boiling potatoes
  • 2 Spring Onions
  • Salt
  • freshly ground pepper
  • 4 tbsp white wine vinegar
  • 5 tbsp mayonnaise
  • 100 g yogurt
  • chives (for garnish)

Instructions

    Wash the potatoes and boil them in salted water for about 25–30 minutes.

    Drain the potatoes, let them steam slightly, then peel while hot and slice into rounds.

    Wash and trim the spring onions, slicing them thinly into rings.

  4. 4.

    Whisk together mayonnaise, vinegar, and yogurt; combine with the sliced potatoes. Season with salt and pepper, then fold in the spring onion rings.

    Serve alongside fish or grilled sausages.
