Potato Salad with Arugula

Ingredients

  • 1 kg waxy potatoes
  • 1 tsp cumin seeds
  • Salt
  • 1 onion
  • 150 ml warm meat broth
  • 1 tsp sharp mustard
  • 2 tbsp wine vinegar
  • Pepper
  • a handful arugula
  • 1 tbsp freshly chopped parsley
  • 4 Tbsp sunflower oil

Instructions

    Wash the potatoes and steam them in salted water with cumin for about 30 minutes. Let them cool slightly, peel, drain, and slice into rounds. Place in a bowl.

    Peel and finely dice the onion. Bring broth, mustard, vinegar, salt, and pepper to a boil. Pour over the potatoes, stir gently, and let infuse for about 20 minutes.

    Rinse the arugula, shake dry, trim, and roughly chop. Combine with parsley and oil, fold into the salad, season to taste, and serve immediately.
