Ingredients

  • 3 stalks celery
  • 2 red bell peppers
  • 3 sprigs thyme
  • 1 thick garlic clove
  • 200 g raisins
  • Marsala (semisecco)
  • olive oil (cold pressed)
  • 100 g roasted pine nuts
  • Salt
  • freshly ground pepper

Instructions

    Wash, trim and slice the celery into wide strips. Wash the red bell peppers, halve them, remove seeds and cut into strips. Peel and halve the garlic clove. Place raisins in a bowl, cover with Marsala wine and let sit for 15 minutes. Heat 2-3 tablespoons olive oil in a wide pot over low heat and sauté celery and pepper while stirring repeatedly.

    Add a sprig of thyme and the garlic to the pot, cover and cook on low heat for 10-15 minutes, stirring occasionally. Drain the raisins well and add them to the vegetables, then simmer together for another 2-3 minutes. Remove the pot from the stove, season with salt and pepper. Mix in the remaining thyme sprigs and pine nuts. Let the dish cool slightly in the pot and serve warm.
