Potato Mice with Carrots and Cheese Filled

Ingredients

  • 1200 g potatoes (8 potatoes)
  • Salt
  • 2 carrots
  • 150 g brie cheese
  • 2 tbsp chives rolls
  • margarine (for the pan)
  • 8 black pitted olives
  • 16 herb leaves (ears)
  • 4 cooked spaghetti strands (tails)

Instructions

    Wash and peel potatoes so they look like little mice. Cut a “lid” off each potato lengthwise. Hollow out the body, leaving about a 1/2 cm thick rim.

    Parboil potatoes in salted water for 10–15 minutes, drain and salt inside.

    Peel and grate carrots finely. Dice cheese into small cubes. Mix carrots, cheese, and chives rolls, then fill the potatoes with this mixture. Replace the lids.

    Grease a baking dish, place the mice inside, bake covered at 200 °C (180 °C fan) for 30 minutes.

    Slice each olive into three pieces and place two slices as eyes and one half-slice as nose on each mouse. Pinch two herb leaves as ears onto the lid and set each mouse on a strand of spaghetti as a tail.
