Ingredients

  • 800 g potatoes
  • Salt
  • 300 g smoked tofu
  • 1 bunch spring onions
  • 2 onions
  • 400 g heavy cream
  • 4 eggs
  • Pepper
  • nutmeg
  • butter (for the dish)
  • 100 g lamb's lettuce
  • 250 g Cherry Tomatoes
  • 2 tbsp white balsamic cream
  • 1 tbsp oil

Instructions

    Preheat oven to 200°C.

    Peel and slice potatoes. Parboil in plenty of salted water for 10 minutes, drain well. Dice tofu. Trim spring onions and cut into thin slanted rings. Peel onions and dice finely. Whisk cream with eggs. Season with salt, pepper, and nutmeg. Combine potatoes, tofu, onions, and spring onions; mix well. Transfer to a buttered baking dish. Bake in the oven for about 40 minutes.

    Wash, trim, and dry lamb's lettuce. Wash tomatoes, pat dry, and halve them. Toss salad in a bowl with balsamic cream and drizzle oil.
