Ingredients
- 4 bulbs fennel
- 3 stems thyme
- 40 ml lemon olive oil
- 1 tbsp fruit vinegar
- 1 pinch sugar
- white pepper
- 1 Garlic clove

Wash the fennel, trim the base thinly, cut back the fronds, and slice the bulbs lengthwise into 1 cm thick slices, ensuring the slices stay attached to the core.

Wash the thyme, strip leaves from stems and add to the aromatised olive oil. Mix in vinegar, sugar and pepper. Peel the garlic clove and press it in. Rub the fennel slices with the Marinade.

Grill the fennel on a hot grill, turning for about 10 minutes until golden‑yellow, brushing again with Marinade. Remove from grill and serve.
