Grilled eggplants with sheep cheese from ➸ Spoonsparrow taste not only for dinner!

Ingredients

  • 3 eggplants
  • Salt
  • 2 slices country bread
  • 6 tbsp Olive oil
  • 300 g feta
  • 1 red chili pepper
  • pepper (ground)
  • 4 tbsp mint

Instructions

    Wash and clean the eggplants, slice lengthwise into 1 cm thick pieces, sprinkle with salt and let sit for 15 minutes.

    Shred the bread into small pieces and fry in a hot pan with 2 tbsp oil until golden brown. Remove and drain on kitchen paper.

    Crush the feta, wash the chili, halve it lengthwise, clean and dice into small cubes.

    Pat the eggplant slices dry, brush with 2 tbsp olive oil and grill both sides for 2 minutes each over a hot grill.

    Arrange on plates, distribute the feta, croutons and chili on top, season with salt and pepper, drizzle with remaining olive oil and sprinkle with mint leaves before serving.
