Ingredients

  • 1.2 kg potatoes (firm boiling)
  • 1 bunch spring onions
  • 1 stalk Celery
  • 150 g ham (small diced)
  • Salt
  • pepper (ground)
  • 150 ml broth
  • 200 g heavy cream
  • 100 g Emmental cheese (fresh grated)
  • 250 g mozzarella (2 balls)
  • celery leaves

Instructions

    Wash and peel potatoes. Wash and trim spring onions and celery sticks. Slice everything; blanch potatoes 8 minutes in boiling salted water, celery and spring onions 1 minute, then drain well. In a greased baking dish layer potatoes, spring onions, celery and ham cubes decoratively (set aside 1 tbsp spring onion rolls for garnish), seasoning with salt and pepper.

    Whisk together broth, cream and Emmental cheese, season with salt and pepper, and pour over the vegetables. Lightly shake the dish to distribute evenly.

    Bake in a preheated oven at 200°C on the second rack from below for about 40 minutes. Slice mozzarella into rounds, spread over the gratin after 20 minutes, and continue baking until done.

    Remove from oven and serve sprinkled with celery leaves and spring onions.
