Potato Dumplings with Butter Crumbs

- 500 g cooked potatoes (from the day before)
- 500 g starchy potatoes
- 125 ml lukewarm milk
- 4 tbsp potato flour
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 125 g butter
- 100 g breadcrumbs

Peel the cooked potatoes and press them through a potato masher. Peel, wash, and finely grate the raw potatoes. Squeeze out excess moisture in a kitchen towel and mix with lukewarm milk, potato flour, and the mashed potatoes. Season with salt, pepper, and nutmeg, then shape into dumplings.

Bring plenty of salted water to a boil in a pot, add the dumplings, reduce heat, and let them simmer for about 20 minutes. When they float on the surface, remove them with a slotted spoon and drain.

Melt butter in a pan and brown the breadcrumbs until golden. Arrange the dumplings on plates, drizzle with the breadcrumb mixture, and serve.
