Ingredients
- 4 zucchini (about 150 g each)
- 3 sprigs thyme
- 100 g peeled pine nuts
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 200 g feta

Wash, trim, and slice the zucchini diagonally into 1 cm thick rounds. Wash the thyme, shake dry, and remove the leaves. Toast the pine nuts in a dry pan until golden brown, then set aside.

Heat the oil in the same pan and sauté the zucchini slices for 3-5 minutes on each side. Season with salt, pepper, and thyme, plate, and sprinkle with toasted pine nuts and crumbled feta before serving.
