Grilled Vegetable Skewers

Ingredients

  • 1 Aubergine
  • 1 Zucchini
  • 1 red bell pepper
  • 150 g cherry tomatoes
  • 150 g shallots
  • 150 g pearl onions
  • 1 Garlic clove
  • 1 tbsp Lemon Juice
  • 2 tbsp olive oil
  • 2 tbsp fresh chopped herbs (e.g., parsley, thyme and rosemary)
  • Salt
  • Pepper
  • 1 baguette

Instructions

    Peel or wash the aubergine, zucchini, bell pepper, tomatoes and onions. Cut everything into bite‑sized pieces; leave the tomatoes and onions whole. Alternate threading them onto wooden skewers. Peel and finely chop the garlic. Mix the lemon juice, olive oil and herbs, then brush this mixture over the skewers. Season with salt and pepper and grill on a hot grill, turning occasionally, for 6–8 minutes until cooked.

    Slice the baguette into thin, long slices and briefly toast them on the grill. Place the grilled vegetable skewers onto the toasted bread slices and drizzle with any remaining oil before serving.
