Ingredients

  • 1 kg starchy cooking potatoes
  • 100 g wheat flour type 1050
  • 2 Eggs
  • Salt
  • a pinch nutmeg
  • 1 sprig parsley

Instructions

    Wash the potatoes and cook them with skins in boiling salted water for 25 minutes. Drain, let steam off slightly, then peel and press through a potato ricer.

    Add two-thirds of the flour, eggs, salt, and nutmeg to the mashed potatoes and knead into a loose, well-formed dough; incorporate more flour if needed.

    Take 60 g portions from the dough and shape them into dumplings with floured hands. Bring plenty of salted water to boil and drop the dumplings in. Simmer gently for about 20 minutes until cooked through. Remove with a slotted spoon and place in a bowl. Wash, dry, and shake parsley, then garnish the dumplings.
