Ingredients
- 1 onion
- 2 Garlic cloves
- 1 chili pepper
- 2 stalks celery
- 800 g mostly waxy potatoes
- 2 tbsp olive oil
- 800 ml meat broth
- 4 sprigs thyme
- 2 Tomatoes
- 300 g chorizo
- 1 tbsp capers
- Salt
- ground black pepper

Peel and finely dice the onion and garlic. Wash, trim and finely chop the chili pepper. Wash, trim and slice the celery. Peel and cube the potatoes. Sauté onion, garlic, chili and celery in hot oil for 1-2 minutes.

Deglaze with meat broth and add the potatoes and thyme to the pot. Simmer gently for about 20 minutes. Meanwhile, blanch the tomatoes over boiling water, cool, peel, quarter, seed and dice them.

Add sliced chorizo and capers to the stew and let cook for 5-10 minutes. Season with salt and pepper and serve.
