Potato Bean Stew

Ingredients

  • 500 g firm potatoes
  • Butterscuttle (for browning)
  • 2 red onions
  • 200 g green beans (frozen)
  • 1 l vegetable broth
  • Salt
  • pepper (ground)
  • Horseradish (to finish)
  • 0.5 Cabanossi sausage
  • 0.5 bunch Chives

Instructions

    Peel the potatoes and slice them thinly.

    Heat a little butterscuttle in a tall pan with lid. Add the potato slices to the hot fat and brown all around.

    Meanwhile, peel, halve, and cut the onions into half-rings. Sauté the onions slightly. Then add the beans and pour enough vegetable broth over everything so that the bottom is covered about 3 cm high. Cover and simmer until the potatoes are tender (about 15 minutes). Add more broth if needed!

    Slice the Cabanossi into rounds and add to the stew. Season the dish generously with salt, pepper, and horseradish.

    Finely roll the chives into small ribbons and sprinkle over the stew.
